A salad bar, a deli bar, made to order nachos and healthy snack choices. These are some of the lunch options now available to students in the Silver Falls School District. The menu change is part of a food service revamp the district has implemented this year. The revamp was necessary in order to comply with the requirements of the national food service program and to make the district’s cafeterias more cost effective while offering fresher and healthier food options.
Food services and facilities management company Sodexo was brought in to provide one-to-one support and training. An executive chef trained kitchen staff on cooking strategies and techniques. Staff were also trained on food ordering, inventory control, recipe planning and completing production records.
“We are now able to offer our students a wide variety of menu options including more fresh foods and foods prepared on site,” said Dandy Stevens, SFSD’s Assistant Superintendent.
For instance, the high school offers a made to order nacho bar three times a week and a made to order deli bar twice a week. Every day there is a rotating hot entrée, a variety of pizzas, hamburgers, salads and several healthy snack options. At the elementary and K-8 schools, Silver Falls now offers three choices a day instead of just one, including a hot entrée, a salad entrée, and a deli sandwich.
“Our kitchen staff are working hard to learn the new program and expectations,” Stevens added. “They care about our students and make it a point to serve them well every day.”
